On The Go (Healthy) Breakfast Options

Updated: Jan 19, 2021

A lot of my friends skip breakfast and I could never because I’ve always been told that breakfast is your fuel and so I always try to grab something to tie me over until lunch. With that, I do understand that it's hard to find quick and healthy options when you’re trying to catch the bus.

Here are some ideas… I rotate through this list

1. Soph smoothie:

I kinda hate myself for naming a smoothie after myself, but what can I say... I'm just creative like that. I use a nutribullet and whip this together in a matter of minutes! Really healthy, but SO filling and SO yummy.

  • Half frozen banana

  • Generous handful of spinach (trust me, you’ll barely taste it)

  • 1 ½ tablespoon of peanut butter or almond butter

  • 1 date (or 2 if you want your smoothie to be sweeter)

  • 1-2 cups of milk of your choosing or any other liquid (water, juice, etc)

2. Banana and Peanut Butter

Nothing too crazy, just a good old sliced up banana with peanut butter. You can top this with cinnamon and/or chia seeds. Also, Justin’s peanut butter does little individual peanut butter packets you can take to go!

3. Avocado and Egg whites

I have no clue why but every time I make myself some sort of egg dish with a side of avocado I feel like a legit chef. Trader Joe’s makes a little carton filled with just egg whites which makes it so easy to pour into the pan and have eggs ready in under a minute. Also you can always add cheese, onions, spinach, peppers… that’s how I like it :)

4. Berries and Cheese

Sometimes if I’m not super hungry in the morning I’ll munch on some berries from the farmer’s market with some cheddar cheese slices (I’ve always hated drinking milk so cheese is a good alternative for getting the diary you need in your diet).

5. Parfait with Vanilla Granola

Plain yogurt, lottttts of berries, yummy vanilla almond granola from Trader Joe's, and honey. You got yourself a parfait (perfect in french) parfait.

6. Peanut butter bars

If there’s one thing that I always go for when I’m super lazy in the mornings, even for a late afternoon snack it’s a peanut butter bar. My favorites are: tiger milk bar, Nature Valley soft baked peanut butter oatmeal squares, or the Trader Joe’s Rolled Oats and Peanut Butter Fiberful Granola Bars

Enjoy and eat up!!!

You got this,

Sophia
